Mongolian Beef & Eggplant with Ginger Scented Jasmine Rice

 

1 pkg. (16 oz.) Kevin’s Mongolian-Style Beef (oh, so perfectly cooked in sous-vide style)
2 Tbs. olive oil
1 cup Japanese eggplant, salted and sweated*
1 cup Jasmine rice + 2 cups water
1″ piece fresh ginger, peeled and minced
2 green onions (scallions), chopped
1 tsp. sesame seeds

 

In a medium pan, heat olive oil until simmering.


Add the salted and sweated eggplant and sauté until golden brown, flipping and stirring often.


Reduce heat to a simmer.


Stir in the Kevin’s Mongolian-Style Beef, along with the sauce, until fully combined.

 

Meanwhile, combine the rice and water in a separate pot and bring to a boil.


Reduce to a simmer. Add ginger. Cover partially and cook until liquid is absorbed and rice is soft and fluffy.

 

Plate with a scoop of rice, several scoops of Mongolian-Style Beef and sauce, and garnish with green onions and sesame seeds.

 

*PRO TIP: Eggplants have a lot of liquid in them: green, bilious, bitter liquid. Left in the eggplant before cooking minimizes the possibility of how great eggplant can taste. “Sweating” the bulb, eliminates the bitter taste.


It’s really easy to sweat an eggplant. Slice or chop, season one side liberally with sea salt, flip over, salt the other side liberally, and let sit for at least 30 minutes on a cooling rack or on paper towel. The bitter liquid will drain and you’ll be all set!
