Chocolate Peanut Butter Sugar Cookie Envelopes
We all know chocolate and peanut butter are a match made in heaven. 🤦🏼♀️ It’s a no-brainer, really.
I’m so-so on chocolate. I do love peanut butter. BUT, when they are paired together, I cannot resist!
And, when mini Reese’s Peanut Butter Cups are baked inside a most perfect butter sugar cookie envelope, there are no limits! No bounds – nothing to stop us, cookie monsters! 🍪👹
REESE’S Milk Chocolate Miniatures are small wonders that spread big happiness.
Individually wrapped and packed with peanut butter and milk chocolate.
I’m making THAT my mantra: I’m a small wonder that spreads big happiness 😁.
Chocolate Peanut Butter Sugar Cookie Envelopes
Butter Sugar Cookie Dough:
1 cup butter, room temperature
1 cup white sugar
1 large egg
2 tsp. baking powder
1 tsp. vanilla extract
1/4 tsp. sea salt
3 cups all-purpose flour
8-12 mini Reese’s Peanut Butter Cups
Cream together the butter, sugar, egg, baking powder, vanilla, and salt until smooth and creamy.
Fold in the flour, 1/2 cup at a time, until fully incorporated.
Divide the dough in half.
Chill for 30 minutes.
Meanwhile, preheat the oven to 350 degrees.
Form the chilled dough into 16-24 small rounds, depending on your preferred size of cookie envelope. (Choose an even number).
Flatten each round into a disc.
Top 1/2 of the chilled sugar cookie discs with one (or two) mini Reese’s Peanut Butter Cups.
Top with another sugar cookie disc and roll into a ball, covering all surfaces of the chocolate treat.
Flatten, again, into a round cookie envelope.
Bake on parchment-lined cookie sheets for 15 minutes, or so, until just beginning to brown.
Remove from oven and enjoy while still warm!
