Orange Essence Rose Cupcakes 🍊🌹🧁

Cupcakes:
2 1/4 cups all-purpose flour
1/4 cup cornstarch
1 1/4 cup white sugar
2 tsp. baking powder
sea salt
1/2 cup butter (1 stick), room temperature
1/4 cup vegetable oil
3 large eggs, room temperature
2 large egg yolks
1 Tbs. vanilla extract
1 cup fresh orange juice
10 drops rose essential oil
5 drops orange essential oil

Rose Buttercream Frosting:
2 cups butter, room temperature (4 sticks)
2 cups powdered sugar
2 Tbs. milk
10 drops rose essential oil
red-pink food coloring

Cake Directions:
Preheat the oven to 350 degrees.

Line 2 cupcake/muffin tins with paper liners.

In a large bowl, whisk together the flour, baking powder, corn starch, and salt.

Set aside.

Cream butter and sugar in a stand mixer using a paddle attachment, or a large bowl if using an electric hand mixer.

Add the vegetable oil and vanilla.

Mix to combine then scrape the bowl down.

Add the eggs, one at a time, mixing until incorporated before adding the next.

Scrape the bowl down once more and mix again.

Add flour mixture, orange juice, and rose oil to the butter in alternating batches while mixing on low.

Divide the batter among cupcake liners (about 24), filling about 2/3 of the way full.

Bake at 350 for about 20-22 minutes, or until the centers are set and springy.

Cool in pans for several minutes. Transfer to a wire rack to cool completely before frosting.

Frosting Directions:
Beat together all ingredients until smooth, scraping down the sides of the bowl periodically.

The frosting should be silky, soft, and luscious. (The degree of “pinkness” in color will be determined by the amount of food coloring…start small and add more to fit your desire).

*TIP: Set aside some plain white or lighter-colored frosting to line the piping bag with for a variegated look.

Pipe frosting over cupcakes using decorative nozzles or simply with a spreading knife.
