Vanilla Bean Caramel Chocolate Elixir Cookies

  


This recipe is not just full of a caramel sauce – it’s engendered with a Vanilla Bean Caramel ELIXIR

Vanilla Bean Caramel Chocolate Elixir Cookies

10 Tbs. butter, room temperature (1 stick + 2 Tbs.)
1 9 oz. jar Vanilla Bean Caramel Elixir
1/2 cup brown sugar, loosely packed
2 large eggs
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. sea salt
1 1/2 cups all-purpose flour +
12 oz. Righteous Cacao Caramel Raw Chocolate (Lucuma & Cacao), roughly chopped (about 5 bars)

 

Using a stand or hand-held mixer, cream together the butter, caramel elixir, brown sugar, and eggs until light and creamy. 

 

Add the baking powder, baking soda, and salt. 

 

Mix well.

 

Next, mix in the flour, 1/2 cup at a time, until fully combined. If the cookie dough is too loose and soft, add 1/2 cup additional flour.

 

Fold in the chopped chocolate.

 

Chill the cookie dough for at least 60 minutes.

 

When ready to bake, preheat the oven to 370 degrees.

 

Form the cookie dough into 1″ balls and flatten into dough patties.

 

Space evenly apart onto parchment-lined cookie sheets.

 

Bake for 13-15 minutes, until puffy and just beginning to brown.

 

Remove from the oven and cool for 15 minutes, or so, before biting into magical magnificence.
