Chocolate Coconut Macaroon Cake Bars
1 1/2 cups Chocolate Coconut Macaroon Truffles, processed into a fine crumb
2 cups all-purpose flour
1 1/2 tsp. baking powder
pinch sea salt
4 large eggs, room temperature
1 1/2 cups sugar
1/2 cup butter, cubed
1 cup whole milk
1 Tbs. vanilla extract
1 Tbs. vegetable oil
3/4 cup sweetened, shredded coconut flakes
Preheat the oven to 350 degrees.
Line a square baking dish with parchment paper.
Whisk together the truffle crumbs, flour, baking powder, and salt.
Set aside.
Beat together the eggs until aerated, about 1 full minute.
Add the sugar and continue beating until expansive, doubled in size.
Place the butter and milk in the microwave or on the stove and lightly melt – then cool (do not allow to boil or bubble).
Gently mix together the flour combo, egg mix, and butter and milk, combination, in batches, until smooth. This can be done in a bowl or with the food processor (from the crumbling of the truffles).
Transfer to the parchment-lined baking pan. Sprinkle with coconut flakes and bake for 50-60 minutes, until the coconut is sweet, aromatic, and toasty brown, and a toothpick inserted comes out clean.
Remove from oven and cool for several hours before slicing, serving, and enjoy while floating among the clouds of your ever-blue skies.
