These handmade, crispy tortas are a great little snack with a perfect balance of sweetness and delightful lemony flavor, earthy blistered tomato, funky Provolone cheese, and even a little prosciutto roll up on the side.

Sweet Lemon Tomato Provolone Olive Oil Tortas
6 Lemon Sweet Olive Oil Tortas (OR homemade tortas, drizzled with lemon juice and dusted with sugar)
12 slices Provolone cheese
1/2 cup cherry tomatoes, halved
freshly cracked black pepper
Preheat the broiler.
Line 3 tortas with 2 slices of Provolone cheese.
Top each with 1/3 of the sliced tomatoes and black pepper.
Stack the final 2 cheese slices over each mound, and layer with the last 3 tortas.
Broil for 1-2 minutes until the cheese and sugar begin to bubble.
Remove from the oven and sprinkle with freshly ground pepper.
Serve with sliced meats, if desired.
