Japanese sweet potato. Purple Sweet potato. Baked perfectly tender and naturally sweet – so delish! Really, NOTHING needs to top these tender treats – but, we must, in this test case.
Sweet, but a bit peppery and savory with deep cola flavors and dark, black pepper – the Vanilla Cola Sauce. Nitro vanilla cola + butter + salt and PEPPER – all reduced, simmered, silkened, and thickened into a gorgeous, saucy glaze.
The plan was to serve this over the uniquely sweet and colorful sweet potatoes, in addition to steamed lobster and green asparagus. Long story aside – THAT didn’t happen – but this did! The sauce is drizzled over the potatoes, alongside a soft, cooked egg.
Ooey – gooey – eggy – sweetly, spicy, gourmande, and delectable. 🤤

Vanilla Cola Sauce – Purple エッグ Vanilla Cola Sauce – Purple Sweet Potato with Egg
1 small Japanese sweet potato
1 small purple sweet potato
12 oz. vanilla cola
4 Tbs. grass-fed butter
1 Tbs. flour
sea salt and pepper
1-3 eggs
touch of vinegar
Preheat oven to 425 degrees.
Wrap each sweet potato in foil and bake for 60-90 minutes or until super soft.
Meanwhile, combine the vanilla cola and butter together in a medium saucepan and bring to a boil.
Reduce heat to simmer and reduce for 30 minutes.
Sprinkle in flour, salt, and pepper and whisk until smooth – continue stirring until nice and thick.
While all the above magic is happening, bring another medium pot of water to a slow boil, adding a touch of vinegar.
Add the egg(s) and poach until perfect.
To assemble, combine all or parts of the sweet potatoes on a plate.
Drizzle with the thickened cola sauce.
Top with poached egg(s) and additional salt and pepper!
