Protein Power Biscuit
1 scoop vanilla protein powder – your choice – (1/4 cup)
1 egg (or sub one flax seed egg for a vegan version)
1 Tbs. coconut butter, softened
1/4 tsp. baking powder
Whisk all ingredients together in a small bowl or ramekin. Microwave on high for about 45 seconds – it may explode, so keep an eye on it.
Pop-out of the ramekin and enjoy.
I think it would outstanding, as well, sliced in half and slathered with a little St. Dalfour raspberry preserves. But that’s just me.
