Grape-Nuts Cinnamon Raisin Walnut Cookies
I fell in love with Grape-Nuts in my college years, once I learned I could microwave the super-duper crunchy goodness with a little milk to create a somewhat crunchy, somewhat soft, somewhat sweet and nutty, utterly delicious snack.
Now, these great little nuggets, baked into a cookie with cinnamon, raisins, and walnuts create the most amazing semi-sweet cookie on earth! Enjoy for breakfast, lunch, snack, or dessert!
Grape-Nuts Cinnamon Raisin Walnut Cookies
1 cup butter or shortening, room temperature
14 oz. sweetened condensed milk
1 tsp. vanilla extract
1 cup sugar
2 cups Grape-Nuts cereal (malted barley cereal)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
½ tsp. sea salt
2 cups all-purpose flour
1 ½ cups raisins
1 ½ cups walnuts, chopped
Preheat the oven to 375 degrees.
Cream together the butter, sweetened condensed milk, vanilla, and sugar.
Mix in the Grape-Nuts and allow to sit for 10 minutes. The cereal will absorb some moisture and soften.
Next, mix in the baking soda, baking powder, cinnamon, and salt.
Add the flour, ½ cup at a time, until well-incorporated.
Fold in the raisins and walnuts.
Line cookie sheets with parchment paper and form 1” sized mounds, spaced 1” apart on the cookie sheets.
Flatten.
Bake for 12-14 minutes, until golden brown.
Remove from the oven and cool before enjoying.
