Key Lime White Chocolate Whip Pie
Key lime pie announces the essence of summer and sunshine weather!

Key Lime White Chocolate Whip Pie
Crust:
8 Tbs. cold butter, cubed
1 cup all-purpose flour
1 cup graham cracker crumbs
1 large egg
1 Tbs. apple cider vinegar
2-3 Tbs. ice water
Preheat the oven to 425 degrees.
Pulse all the crust ingredients together in a food processor until beady.
Transfer to parchment paper and form into a dough mound.
Top with another sheet of parchment and roll out into an 11″ crust.
Transfer to a deep-dish pie plate and flute the edges.
Bake for 15-20 minutes, until golden brown.
Remove from the oven and cool.
Key Lime Custard Filling:
4 Tbs. butter
2 cups 2% milk
1 1/2 cups white sugar
1 tsp. vanilla extract
1 tsp. sea salt
5 large eggs
1/4 cup all-purpose flour
juice and zest of 15 key limes
In a medium saucepan, melt the butter and whisk together the milk, sugar, vanilla, and salt.
Once the butter is melted, reduce the heat to the lowest setting.
Whisk in the whole eggs.
Continue whisking to prevent any cooking and curdling.
Once combined, whisk in the flour.
Continue whisking until thick.
Whisk in the lime juice and zest.
Transfer to the cooled pie crust.
White Chocolate Whip:
1 full container of frozen whipped topping (Cool Whip)
1 pkg. Godiva Vanilla White Chocolate Pudding
Let the frozen whipped topping set to come to room temperature.
Fold in the white chocolate pudding powder.
Swirl over the top of the key lime custard filling
Top with fresh key lime zest and wedges.
