Apricot Almond Dill Chicken Salad Brioche Buns
There’s something about adding a little bit of texture, crunch, and sweetness to a chicken salad that makes it all that much better. Really – there is.
Thus, a homemade chicken salad with crunchy celery, crunchy almonds, and chewy, sweet, and tangy dried apricots and dill creates a flavor sensation worth remembering.
Oh, and served inside soft and squished Brioche buns (maybe homemade, maybe not), we’re in texture and taste heaven over here!
Brioche is a sweet French yeast bread that is enriched with butter, milk, and eggs. Brioche dough can be used to make a loaf (which makes the most perfect French toast), cinnamon rolls, or delicious gourmet buns.
Apricot Almond Dill Chicken Salad Brioche Buns
1 1/2 cups shredded cooked chicken breast
1/4 cup chopped celery
1/4 cup chopped dried apricots
1 cup sliced almonds
1/4 cup mayonnaise
1 Tbs. sweet mustard
1 Tbs. baby dill, finely chopped
sea salt and pepper
Combine all ingredients together and mix well.
Serve inside mini-Brioche buns – soft, sweet, and perfectly unique.
Homemade Brioche Buns:
1 cup warm water
¼ cup warm whole milk
1 Tbs. instant yeast
2 Tbs. granulated sugar
1 ½ tsp. salt
1 egg
2 cups all-purpose flour
1 ½ cups white whole wheat flour
2 Tbs. unsalted butter, room temperature, cut into 4 pieces
Egg Wash:
1 egg
1 Tbs. milk
Line a baking sheet with parchment paper.
Combine the warm water, warm milk, yeast, and sugar in the bowl of a stand mixer.
Stir gently to combine.
Let stand for 5 minutes.
Add the salt and egg to the bowl.
Use the paddle attachment to combine at low speed.
Add both flours and mix on low speed until combined, then mix in the butter pieces.
Switch to the dough hook on the stand mixer and knead for eight minutes or so.
The dough will be very soft and slightly sticky.
Transfer the dough to a floured work surface and knead a few times with your hands to form it into a ball.
Cut the dough into eight pieces.
Shape each piece into a round ball and place it on the prepared baking sheet.
Loosely cover the dough balls with a clean kitchen towel and let rest for 15 minutes.
Meanwhile, preheat the oven to 400 degrees.
Combine the egg and 1 Tbs. milk in a small bowl for the egg wash, stirring with a fork.
Remove the towel and brush the tops of the buns with the egg wash.
Bake the buns in the oven for 13-15 minutes, until the tops are golden brown.
