Cinnamon Raisin Oatmeal Cookie Sweet Rolls
Sweet Rolls:
2 sheets puff pastry, thawed
Cinnamon Raisin Oatmeal Cookie Dough:
2/3 cup white sugar
2/3 cup dark brown sugar, firmly packed
12 Tbs. butter, softened
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/2 tsp. baking powder
1/2 tsp. sea salt
2 large eggs
1 cup quick-cooking oats
1 2/3 cups all-purpose flour
1 cup raisins
Preheat oven to 400°F.
Thaw the puff pastry sheets (covered).
Roll out by about 1/3 more than packaged.
Slice into 2” deep lengths.
In a large bowl, beat all ingredients except oats, flour, and raisins with an electric mixer on medium speed, or with a spoon. Stir in oats, flour, and raisins.
Roll the cookie dough between your hands into long “tubes” to fill each puff pastry length.
Roll the pastries into rounds.
Bake on parchment-lined cookie sheets for 15-20 minutes, until crispy and golden brown.
