Double Chocolate Nut Zucchini Bread
1 cup Hazelnut Chocolate Spread (Bonne Maman or Nutella)
1 medium zucchini, shredded
3 large eggs
3/4 cup white sugar
1/2 cup brown sugar
¼ cup heavy cream
2 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. sea salt
2 cups all-purpose flour
1 1/2 cups dark chocolate chunks
1 cup walnut pieces
Preheat the oven to 350 degrees.
Combine the Hazelnut Chocolate Spread with the zucchini, eggs, sugars, cream, baking soda, vanilla, and salt.
Mix well.
Fold in the chocolate chunks and walnuts.
The batter will be thick – halfway between cake and cookie dough.
Line a bread pan with parchment paper.
Transfer the dough to the pan and bake for about 45 minutes, until a toothpick inserted comes out clean.
Cool for several hours before slicing and serving.
