Oatmeal Raisin Spice Cookies
Soft and chewy with plenty of cinnamon spice, these Oatmeal Raisin Spice Cookies offer a unique and very coveted twist to a traditional oatmeal raisin cookie. Made with brown sugar, vanilla, cinnamon, chewy oats, sweet raisins, and heavy cream, this recipe wins for both texture and flavor-rich, chewy, and utterly delicious.
Oatmeal Raisin Spice Cookies
1 cup butter, room temperature
1 cup light brown sugar, loosely packed
¼ cup granulated sugar
2 large eggs
1 Tbs. vanilla extract
¼ cup heavy cream
1 ½ cups all-purpose flour
1 tsp. baking soda
2 tsp. ground cinnamon
pinch kosher salt
3 cups quick cooking oats
1 cup raisins
Preheat the oven to 350°F.
Cream together the butter and sugars until light and fluffy. Add the eggs and mix on high until well combined.
Add the vanilla and cream and mix well.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Add the flour mixture to the wet ingredients and mix well.
Fold in the oats and raisins.
Set aside for 10 minutes.
Form 1” round balls of dough into flat discs with oiled hands and place on a parchment lined cookie sheet.
Bake for 12-14 minutes, until golden brown, removing from the oven while still slightly chewy in the center.
Remove from the oven and cool directly on the baking sheet for 10 minutes.
Enjoy two or three cookies with a cold glass of milk.
