Salsa Egg Ring
Similar to the idea of Shakshuka poached eggs in tomato sauce, these eggs are baked inside the amazing flavors of Desert Pepper Trading Company’s Salsa for a fresh southwestern flavor. Cilantro Lime Rice and cheese accompany the salsa and eggs and are all nestled inside a beautiful egg ring for an amazing presentation.
Salsa Egg Ring
8 medium flour tortillas
2 cups Cilantro Lime Rice*
2 cups Desert Pepper Trading Company’s Salsa
4-5 large eggs
kosher salt and pepper
1 crumbled feta cheese
Preheat the oven to 425 degrees.
Line a bundt pan with the medium tortillas.
Evenly spread the prepared Cilantro Lime Rice over the tortillas.
Spread all the salsa evenly over the top of the rice.
Crack each egg and carefully place it in a nest of salsa – spread out all eggs evenly.
Sprinkle with salt and pepper.
Next, sprinkle the cheese over the top of the ring.
Bake for 20-25 minutes, until the eggs are just about done.
Remove from the oven and cool before slicing and serving.
*Cilantro Lime Rice:
1 cup basmati rice
fresh juice of 1/2 lime
2 cups water
1 tsp. kosher salt
3 Tbs. freshly chopped cilantro
3 Tbs. olive oil
In a small pot, add rice, water, 1 tsp. oil and salt.
Boil on high until most of the water evaporates.
When the water just skims the top of the rice, reduce to low and cover for about 20 minutes.
Remove from heat and keep covered for an additional 5 minutes.
In a medium bowl, combine chopped cilantro, lime juice, rice, and remaining oil and toss until completely mixed.
