Beet White Chocolate Rice Layer Bake

Beet White Chocolate Rice Layer Bake
Rice Layers:
4 cups cooked brown rice
4 large eggs
2 cups sharp white cheddar cheese, grated
kosher salt and pepper
Preheat the oven to 425 degrees.
In a large bowl, mix together all the rice layer ingredients.
Line a baking sheet with parchment paper and evenly spread the rice mixture in a thin layer.
Bake for 20 minutes, until bubbling.
Remove from heat and cool completely.
Beet Layer:
1 Tbs. butter
1 medium onion, chopped
2 cups roasted beets, peeled and sliced
kosher salt and pepper
fresh parsley, minced
1 can condensed cream of chicken soup
2 cups coarsely shredded white cheddar cheese
fresh chives and parsley, finely chopped
To Assemble:
Line a square baking dish (or two loaf pans) with parchment paper.
Slice the rice layer crust to fit two different layers for each pan (2 for the square sheet, 4 pieces for two loaf pans).
Top the rice layer with the chicken soup and then evenly spread the cooked beet mixture over the top.
Next, top with the next layer of rice crust.
Finally, top with the remaining cheese.
Bake at 425°F until brown and bubbly.
Cook for at least 6 minutes.
Garnish with fresh chives and parsley before slicing and serving.
