Chocolate Mousse Cranberry Pecan Cookies
Using chocolate cake mix and chocolate frosting for the base of these easy homemade cookies creates a mousse-like texture and a deep, rich chocolately flavor mixed with tangy-sweet dried cranberries and crunchy, nutty pecans.
Chocolate Mousse Cranberry Pecan Cookies
2 large eggs
2 cups chocolate frosting (homemade or off the shelf)
1 pkg. chocolate cake mix
2 cups all-purpose flour
1 cup sweetened-dried cranberries
1 cup chopped pecans
Preheat the oven to 350°F.
Line several baking sheets with parchment paper.
Using a stand mixer, beat together eggs and chocolate frosting until smooth.
Mix in the chocolate cake mix, as well as the flour, adding the flour ½ cup at a time, until a mousse-like cookie dough texture forms.
Fold in the cranberries and pecans.
Form the dough into balls and then flatten on parchment paper.
Bake for 12-13 minutes.
Cool before serving.
