Cinnamon Raisin Vanilla Pecan Protein Cookies

 

Without ANY flour at all, we’ll go ahead and call these super delicious cookies “healthy,” right?

 

They are still COOKIES – they still contain butter and sweetened condensed milk, BUT they are protein-packed, full of fiber, and supremely delicious. 
What can go wrong with cinnamon, raisin, vanilla, and pecan?

 

NOTHING is the answer – just in case you were wondering 






Cinnamon Raisin Vanilla Pecan Protein Cookies 

½ cup butter, softened
14 oz. sweetened condensed milk
2 large eggs
22 oz. (1 pkg) ONE Vanilla Protein Powder (or any vanilla protein powder)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. vanilla extract
¼ tsp. kosher salt
1 cup Thompson raisins
1 cup chopped pecans

 

Preheat the oven to 350°F.

 

Using a stand mixer or hand mixer, cream together the butter, sweetened condensed milk, and eggs until light and fluffy.

 

Add the protein powder, baking soda, baking powder, cinnamon, vanilla, and salt. Beat well.

 

Finally, fold in the raisins and pecans.

 

Line baking sheets with parchment paper.

 

Using your hands, grab 1” round balls of dough and flatten into discs, spacing evenly apart on the prepared baking sheets.

 

Bake for 12-15 minutes, until beginning to brown around the edges.

 

Remove from the oven and allow to cool before enjoying in every way!
