Lemon Curd Thyme Paneer Biscuit Cookies








A super easy and incredibly decadent biscuit cookie recipe made with the simplest of ingredients: lemon curd, cake mix, paneer cheese for extra tang, and fresh thyme.

Lemon Curd Thyme Paneer Biscuit Cookies 

14 oz. Easy Lemon Curd
3 large eggs
8 oz. paneer cheese, crumbled
2 Tbs. fresh thyme
1 box yellow cake mix
1 cup all-purpose flour

 

Preheat oven to 350°F.

 

Whisk together the lemon curd and eggs and then mix with paneer and thyme.

 

Mix in the boxed yellow cake mix and additional flour and stir until well combined.

 

The dough batter will be sticky.

 

Drop round spoonfuls of the biscuit cookie batter on parchment-lined baking sheets and bake for 12-15 minutes, until golden brown.

 

Cool and allow to “crust” before serving.
