Chocolate Peppermint Cake Cookies
Chocolate Peppermint Cake Cookies are a delightful treat that combines rich chocolate cake flavors with the refreshing taste of peppermint, all wrapped up in a delectable cookie package.
Topped with a generous layer of smooth vanilla icing and a garnish of peppermint candy, these cookies are the perfect blend of sweetness and holiday cheer! – And, by the way, they can be considered “cheater” cookies, since they are baked with Bob’s Red Mill Chocolate Cake Mix, Peanut Butter & Co. Chocolate Peanut Butter, and Peppermint Schnapps, there’s not really a whole lot YOU have to do!
Chocolate Peppermint Cake Cookies
1 pkg. Bob’s Red Mill Chocolate Cake Mix
1 pkg. (2 cups) Chocolate Peanut Butter Spread
3 large eggs
¼ cup Peppermint Schnapps
1 tsp. vanilla extract
¼ tsp. kosher salt
2 cups vanilla icing
1 pkg. peppermint candy discs
Preheat the oven to 375 degrees.
Cream together the chocolate peanut butter, eggs, cake mix, and peppermint liqueur until smooth and creamy.
Add the cake mix, vanilla, and salt.
Mix until a somewhat soft cookie dough forms.
Using your hands, grab 1” sized mounds of cookie dough and form into discs.
Evenly place 1” apart on parchment lined cookie sheets and bake for 12-14 minutes, until fragrant and golden brown.
Cool thoroughly before icing.
Garnish with peppermint candies.
