Sundried Tomato Cheese Pizza Bake
2 recipes (double the recipe) Homemade Pizza Dough
8 oz. mascarpone cheese, room temperature
8 oz. sundried tomato spread (sundried tomatoes pureed with oil and Italian herbs)
16 oz. shaved Parmesan cheese
Preheat the oven to 375 degrees.
Roll out 1 recipe of prepared pizza dough into a 12-14” round.
Evenly spread the mascarpone cheese over the dough, topped with another even layer of the sundried tomato spread.
Top with the shaved parmesan cheese.
Roll out the 2nd batch of prepared pizza dough into the same size and top with the cheesy-tomato-topped crust.
Roll up the sides to tightly seal in the yummy ingredients, creating a giant “calzone” or double-stuffed pizza crust bake.
Transfer to a parchment-lined baking dish and bake for 35-45 minutes, until golden brown and thoroughly cooked.
Remove from oven and cool for 10-15 minutes before slicing and serving.
