Sundried Tomato Kale White Bean Prosciutto Sauté



A super easy and delicious one-pot Italian meal, packed with amazing, flavor, texture, and all the goodness you can imagine! 






Sundried Tomato Kale White Bean Prosciutto Sauté 

4 oz. chopped prosciutto ham

 

1 large shallot, minced
2 cups canned white beans, rinsed and drained
2/3 cup oil-packed sundried tomatoes, drained and chopped
2 cups kale leaves, rinsed and chopped
sea salt and pepper

olive oil
shaved Parmesan cheese

 

Bring a large skillet or pot to medium heat.

 

Sauté the prosciutto until crispy, stirring often.

 

Remove the cooked ham from the skillet and set aside, reserving the rendered fat.

 

Sauté the minced shallot in the fat, until crispy brown.

 

Add the beans, tomatoes, and kale. Season with salt and pepper.

 

Stir every so often, covering to wilt the kale.

 

Once the kale has wilted but is still bright green (about 3 minutes), remove the lid and drizzle with fine olive oil, making sure to coat all surfaces.

 

Serve with shaved Parmesan cheese.
