Chocolate OREO Cookie Layer Cake




A Chocolate OREO Cake is to die for – truly. Three layers of moist chocolate cake are infused with broken Oreo cookies and frosted with chocolaty, Oreo-packed buttercream, plus more Oreos are layered between the cake layers. It’s an Oreo lover’s dream.






Chocolate OREO Cookie Layer Cake 

Chocolate Cake:
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 cup milk
1/2 cup butter, room temperature
2 tsp. vanilla extract
1 cup boiling water


OREO Loaded Sandwich Cookies, broken into chunks

 

Preheat oven to 350 degrees. 

 

Lightly coat three 6-inch cake pans with butter and dust with all-purpose flour.


Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in a large bowl. 

 

Add eggs, milk, oil, and vanilla and beat on medium with an electric mixer for about 2 minutes. 

 

Stir in boiling water (batter will be thin). 

 

Fold in the OREO cookie chunks.

 

Pour batter into prepared pans. 


Bake for 30 to 35 minutes or until a wooden pick inserted in the center comes out clean. 

 

Cool the cake in the pan on a wire rack for 5 minutes.


Unmold and cool completely.

 

Wrap tightly in plastic wrap and cool or freeze for at least one day.

 

Oreo Vanilla Buttercream:
½ cup butter, room temperature
½ cup shortening, room temperature
2 cups powdered sugar
2 Tbs. cream or whole milk
1 tsp. vanilla extract
pinch of kosher salt
1 cup Oreo cookies, processed into a large, rough, and chunky crumb

 

Combine the butter, shortening, sugar, cream, vanilla extract, and salt for the frosting. 

 

Using a slow speed, gradually increase the speed until the frosting is very thick and smooth. 

 

Divide the mixture in half.

 

Whip one-half of the frosting with the Oreo cookie crumbs.

Unwrap the cakes layers and prepare to frost.

 

Top the first tier with a generous amount of the frosting mixed with the Oreos. Top with another layer and repeat.

 

Next frost the sides and top of the layer cake with the plain vanilla buttercream, leaving a “transparent” and minimalistic look to the sides. (Double the recipe if you prefer a traditional cake look and more frosting).

 

Top with a final few scoops of frosting and Oreo cookies.
