Peanut Butter Chocolate Walnut Raisin Cookies
½ cup butter or shortening (room temperature)
1 ½ cups smooth peanut butter
1 ¼ cups sweetened condensed milk
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
¼ tsp. kosher salt
2 ¾ cups all-purpose flour
1 cup chocolate-covered walnuts
1 cup chocolate-covered raisins
1 cup raisins
Preheat the oven to 375°F.
Line baking sheets with parchment paper.
Using a stand or hand mixer, cream together the shortening, peanut butter, and sweetened condensed milk until smooth and silky.
Add the vanilla, baking soda, baking powder, and salt. Mix until smooth again.
Add the flour, ½ cup at a time and mix until well combined.
Fold in the walnuts, raisins, and raisins.
Form into mounds and flatten into discs with your hands and space evenly apart on the parchment lined baking sheets.
Bake for 15 minutes or so, until the cookies just begin to brown.
Remove from the oven and cool for 10 minutes before devouring with a giant glass of milk!
