Chewy Oatmeal Peanut Butter Pastel Chocolate Candy Cookies

 

1 cup smooth peanut butter
½ cup butter, softened to room temperature
2 large eggs
1 cup brown sugar, loosely packed
½ cup cane sugar
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
pinch of kosher salt
1 cup quick oats
1 ¼ cups all-purpose flour
1 cup roasted peanuts
1 cup pastel chocolate candy pieces (basically, organic M&Ms)

 

Preheat the oven to 350°F.

 

Line baking sheets with parchment paper.

 

Using a stand or hand mixer, cream together the butter, smooth peanut butter, eggs, sugars, and vanilla until smooth and creamy.

 

Add the baking soda, baking powder, and salt. Mix well.

 

Add both the oatmeal and flour, ½ cup at a time, and mix well.

 

Fold in the peanuts and candy.

 

Form into 1” sized mounds and flatten into discs, placing on the lined baking sheets.

 

Bake for 12-14 minutes, until just beginning to brown.

 

Cool for at least 20 minutes (or they will fall apart) before devouring!
