Cinnamon Cereal Chocolate Coconut Protein Bread
I’m quite often a victim of both grand marketing and impulse buys.
This time, it was a crunch cinnamon toast cereal.
Slightly sweet, a bit spicy, and super crunchy.
It sounds delicious, right?
I thought so too -
and then I remembered (after purchase, of course) that I don’t eat cereal. 🙄
I hate to let things go to waste. So, I rolled up my creative sleeves and went to work.
With a hint of chocolate coconut treacle, this little loaf is truly amazing!

Cinnamon Cereal Chocolate Coconut Protein Bread
12 oz. Cinnamon Crunch Protein Cereal (somewhat crushed)
1 ¼ cups Kokada Brownie Coconut Spread
½ cup plant-based butter, room temperature
½ cup coconut cream
½ cup brown sugar, loosely packed
3 large eggs
pinch of salt
Preheat oven to 350 degrees.
Line a loaf pan with parchment paper.
Using a stand mixer, cream together the coconut spread and butter until smooth.
Mix in the coconut cream, eggs, brown sugar, and a pinch of salt and beat until creamy and smooth.
Mix in the crushed cereal and fully combine.
Transfer to the parchment-lined baking dish and bake for 30-35 minutes, until cooked through and amazingly fragrant.
Remove from oven and cool until set.
Slice and enjoy.
