Chewy Chocolate Cherry Cookies

These are so chewy and so yummy!
Chewy Chocolate Cherry Cookies
¾ cup butter, room temperature
1 ½ cups granulated sugar
2 large eggs
2 tsp. vanilla extract
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 tsp. baking soda
½ tsp. kosher salt
1 cup chocolate-covered dehydrated cherries
½ cup chocolate chunks
Preheat the oven to 350°F.
Line baking sheets with parchment paper.
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugar on medium-high speed until light and creamy, about 4 minutes.
Add the eggs one at a time, mixing after each.
Add the vanilla.
In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
Add to the mixer and mix until just combined.
Fold in the chocolate-covered cherries and chocolate chunks.
Form into 1”-sized rounds and flatten before placing on the parchment-lined cookie sheets.
Bake for 12-15 minutes, until flat and melty.
Remove from the oven and cool for 20 minutes before devouring or transferring to a serving plate.
These are super soft and chewy!
