Coffee Tomato Vodka Sauce Over Veal




Elevate your saucy game with a rich and tantalizing Coffee Tomato Vodka Sauce served over ground veal. Coffee Tomato Vodka Sauce Over Veal

2 Tbs. butter
2 cups cherry tomatoes
¾ cups coffee-infused vodka
1 Tbs. powdered espresso
kosher salt and pepper
1 lb. ground veal
2 cups Israeli cous cous, cooked and drained
freshly ground pepper

In a medium skillet or saucepan, melt the butter over medium-low heat.

Add the fresh tomatoes and vodka. 
Cook at a simmer, crushing the tomatoes with the back of a spoon, until the liquid has reduced by ¾ and the sauce becomes somewhat thick.

Add the espresso powder and season with salt and pepper. Stir well.

Remove from heat. Cover and let sit for 15-20 minutes.

Meanwhile, in a separate pan, brown the ground veal, breaking apart with the back of a spoon.

And, in another pot, prepare the couscous. Once the liquid has absorbed, cover tightly for 5-10 minutes. Remove the lid and fluff the pasta just before plating.

Serve with a few spoonfuls of cous cous, topped with the veal, and then generous heaps of the tasty tomato sauce.

Garnish with freshly ground pepper.
