Pork Loin with Honey Vodka Tomato Sauce

Pork Loin with Honey Vodka Tomato Sauce

2 Tbs. butter
2 cups cherry tomatoes
¾ cup honey-infused vodka
kosher salt and pepper
1 lb. boneless pork loin chops
freshly chopped parsley

In a medium skillet or saucepan, melt the butter over medium-low heat.

Add the fresh tomatoes and vodka. 
Cook at a simmer, crushing the tomatoes with the back of a spoon, until the liquid has reduced by ¾ and the sauce becomes somewhat thick.

Season with salt and pepper. Stir well.

Remove from heat. Cover and let sit for 15-20 minutes.

Meanwhile, preheat the oven to 500°F.

Season the pork with salt and pepper, drizzling with a bit of olive oil, if desired.

Wrap in foil and bake at 500°F for 10 minutes.

Turn off the oven, keeping the door tightly closed.

Allow the pork to continue to cook in the oven (not running, but tightly sealed) for an additional 20 minutes.

Remove the pork from the oven, ensuring the internal temperature has reached about 165°F.

Plate and serve the pork topped with the amazing Honey Vodka Sauce, along with additional salt and pepper. 

Sprinkle with chopped parsley

Pair with brown rice or oven-roasted potatoes.
