Chewy Nut Butter Oatmeal Bars
During our month-long moving adventure, playing musical houses and “sofa surfing,” we had the opportunity to sojourn with a super generous, exceptionally kind soul, and somewhat of a stranger (a friend of a friend). This lovely lady whipped up a batch of homemade granola bars to share with us during our stay with her.
Her chewy creation kindly inspired me to do something similar, but also a little different.

Chewy Nut Butter Oatmeal Bars
2 cups chopped dates
1 cup toasted, chopped hazelnuts
1 cup chocolate chips
3/4 cup smooth nut butter
3/4 cup honey
2 1/2 cups raw oats
In a large bowl, combine the dates, nuts, chocolate, nut butter, and honey until well incorporated.
Fold in the raw oats until all surfaces of the oats have been coated with the sticky honey nut butter mixture.
Press into a large 9x13 glass pan and tightly cover with plastic wrap.
Chill for several hours to set.
Slice to serve.
Wrap each sliced “bar” in plastic wrap to individually store.
