Chocolate Pecan Ice Cream Snack Cake
This is not a traditional ice cream cake. But it is a snack cake, totally delicious, baked with chocolate ice cream!
Never to let anything go to waste, our pint of Häagen-Dazs sat idle in the fridge. Brian only likes PEANUT BUTTER Chocolate (with chunks of peanut butter) and I’m a vanilla gal - rarely ice cream, as I don’t enjoy the cold block in my tummy.
In any case, my goal was to put this pint to good use. I melted the chocolate madness, added eggs, flour, baking powder, and a hint of cinnamon for a perfect batter. Next, I folded in chopped pecans and extra chocolate chips. I transferred it all to a glass dish for baking. The result was the most amazingly moist and delicious “snack” cake on earth!
Of course, not planning to blog this post, I neglected any sort of measurements or process photos. Thus, take in the ROUGH estimate of items involved (mainly flour and extra liquid) in order to create a “biscuit batter” consistency. Then, bake and go to town, devouring all pieces in any and every way. It’s not too sweet – meaning, you can indulge ANY time, really. Think, breakfast… - alongside your morning cup a’ joe, eggs, or even slathered with natural peanut butter.

Chocolate Pecan Ice Cream Snack Cake
1 pint Häagen Dazs Chocolate Ice Cream, melted
2 large eggs
2 cups all-purpose flour
2 tsp. baking powder
2 tsp. ground cinnamon
(+ vanilla plant milk or protein drink to add moisture, if need be) - the batter should be biscuit texture, thick and sticky
1 cup chopped pecans
3/4 cup chocolate chips
Preheat oven to 350°F.
Butter a rectangular baking dish liberally.
In a large bowl, mix together all the snack cake ingredients until well combined.
Transfer to a prepared baking dish.
Bake for 35-45 minutes, until risen, fragrant, and cooked all the way through when a toothpick in the center comes out clean.
Cool for several hours before slicing and serving.
Serve alongside coffee, topped with whipped cream, or next to your favorite ice cream!
