Lemon Curd Candied Almond Sugar Drop Cookies

Lemon Curd Candied Almond Sugar Drop Cookies
2 ¾ cups all-purpose flour
1 tsp. baking soda
½ tsp. baking powder
1 ½ cups white sugar
1 cup butter, softened
2 eggs
1 teaspoon vanilla extract
12 oz. Lemon Curd
2 cups candied almonds
powdered sugar (for dusting)
Preheat oven to 350°F.
Stir flour, baking soda, baking powder, and sugar together in a small bowl.
Beat sugar, butter, and eggs together in a large bowl with an electric mixer until smooth. Fold in the Lemon Curd and vanilla extract.
Gradually blend in the flour mixture until well combined.
Fold in candied almonds.
Scoop 1-2 Tbs. “drops” of dough onto parchment-lined cookie sheets.
Bake for 20-22 minutes, until just beginning to brown on the edges.
Remove from the oven.
Once cool, sprinkle the cookies with powdered sugar.
