Buffalo Chicken Blue Cheese Calzone

It's been a while since I've made Brian his favorite Buffalo Chicken meal.

While I feel like I do a great job, this is the one meal and area for which I allow him free rein in my clean kitchen. He enjoys making this meal, and he likes it "his" way.

However, I opted for a calzone version of the buffalo chicken and blue cheese meal this time. Served alongside a lovely green salad, it turned out great!

A buffalo chicken blue cheese calzone is basically chaos and comfort folded into one golden pocket. Here’s why it hits so hard:

  1. That flavor tension — spicy buffalo sauce slams into cool, tangy blue cheese. It’s the culinary version of a mic drop.

  2. Texture magic — chewy dough on the outside, molten filling inside. Every bite is a contrast of crispy crust, juicy chicken, and creamy cheese.

  3. It’s a portable indulgence — you get the messy satisfaction of wings and dip, but neatly wrapped in bread. No napkin massacre.

  4. Emotional payoff — it tastes like game day, rebellion, and comfort food nostalgia all at once.

  5. Balance — the vinegar heat of the buffalo sauce cuts through the richness of cheese and dough, so it never gets cloying.

It’s not just pizza folded over — it’s wing night reinvented.

Buffalo Chicken Blue Cheese Calzone

2 cups buffalo chicken (homemade or store-bought)**
2 cups crumbled blue cheese
generous side salad

Preheat the oven to 375 degrees.

Prepare the pizza dough as directed, rolling it out into a large 9" disc.
Fill 1/2 of the pizza dough with the prepared buffalo chicken, topped with blue cheese,
Fold over the second half of the pizza dough to form a dough crescent, calzone shape, crimping the edges to seal in the ingredients and flavor.

Transfer to a parchment-lined baking sheet.
Bake for 25-35 minutes, until the crust is golden brown.

Cool for 25-35 minutes before slicing and serving with a delicious homemade green salad.
