Wild Rice Pilaf Salad




In common observation, I see that some people are ALL about the holiday side dishes - and pay no attention to the supposed "star" of the meal: turkey, ham, rack of lamb, prime rib - whatever the family tradition may be.

I adore side dishes as well. - The side piece I find myself Craving4More is certainly not traditional. creamy, slimy green bean casserole, overly saccharine sweet potato casserole, rich scalloped potatoes, and both stuffing and mashed potatoes.

Fresh and fragrant wild rice pilaf salad is more of my jam.


Watch out - you may be preparing this on a very regular basis - NOT just for Thanksgiving or Christmas!

Wild Rice Pilaf Salad

2 cups wild rice mix
4 ½ cups water

1 cup green onions, chopped
¾ cup dried cranberries
¾ cup sliced almonds
1 cup fresh celery, finely chopped
¼ cup fresh parsley
kosher salt and freshly ground pepper
1 cup Brianna’s Poppyseed Dressing

 

In a medium pot, bring the water and rice to a boil.
Reduce the heat to a simmer, and partially cover the rice.
Cook for about 30 minutes.
Remove from heat, keep covered, and allow to sit for 30-60 minutes.

Next, fold in the following ingredients once the rice has cooled, and mix well.

Serva alongside anything and everything, particularly roasted turkey on he big Turkey Tom day!
