Christmas Cranberry Brie Pastry Rosette





The tradiontial baked brie recipe for holiday parties is always a hit!

After experiencing one already this year, I dedcided it would be my job, my perogative, and my mission to create a super unique baked brie and cranberry dish that everyone can enjoy, any time of year.

It is rather safe, with triple cream brie and homemade crabnberry sauce, fitting into all of Dad's perimateters,  and served with toasted crackers, this rosette is your new favorite way to entertain!




Christmas Cranberry Brie Pastry Rosette

Homemade Cranberry Sauce:

  • 1 cup fresh cranberries
  • 1 cup fresh raspberries
  • 1 cup white sugar
  • 1 star anise pod
  • 1/3 tsp. agar root
  • 1 tsp. orange extract
  • 1 tsp. balsamic vingear
Brie and Pastry
  • 6 oz. triple cream brie, thinly sliced
  • 1 sheet puff pastry, thawed, cut into rounds, and then halved.

Combine the cranberries, white sugar, and water in a small pan.

Bring to a boil and then reeduce to a simmer. Stir in the anise pod and agar root. Once ready to remove from the heat, add the orange extract and balsamic vinegar.

Smash the cranberries every so often, stirring continuously until the ilquid becomes a spreadable paste

Once the jam is fully cooled, roll out one pastry sheet and use a small circular cookie cutter to create flower petals by slicing the daily rounds into puff half crescents.

Drizzle with homemade cranberry sauce* and brie cheese, Lining up the half crescents into a love overlappy line, and then rolling into a rosette, is the easiest way to achieve the aesthetic accomplishment of this recipe.

Line a baking sheet with parchment paper. 

Transfer the rosettes to the baking sheets and fill with remaining cranberry sauce. (Feel free to place rosettes into round cookie butters to ensure they hold their singular shape while baking). 

Remove the oven and sprinkle with chopped Italian herbs.

Once room temperature, the pastry can be warmed again, and enjoyed with nuts, seeds, and extra crispy crackers. Slice pieces off the rustic rolls and serve with your favorite cheese and baguette.
