Caramelized Onion Egg Bake
Some recipes happen because you planned them. Others happen because your cravings staged a coup and demanded something both comforting and a little fancy. This Caramelized Onion Egg Bake definitely falls into the second category. Imagine a sweet oat‑cracker crust that tastes like breakfast and dessert shook hands, a fluffy Parmesan‑Boursin egg filling that feels like a hug, and a glossy crown of caramelized onion jam that makes the whole thing look like it dressed up for brunch.
It’s part tart, part
quiche, part happy accident — and entirely the kind of dish you’ll want to make
again just to smell it baking. Let’s dive in.
Caramelized Onion Egg Bake
Crust:
1 pkg. (7.2 oz) Effie’s Oatcake Biscuit Crackers
8 Tbs. butter, ice cold
Process both ingredients in the bowl of a food processor until smooth and doughy.
Transfer to a bread loaf pan.
Preheat the oven to 400 degrees.
Filling:
5.3 oz. Boursin Caramelized Onion & Herbs Cheese
8 oz. grated Parmesan cheese
4 large eggs
kosher salt and pepper
After wiping down the bowl of the food processor, puree all filling ingredients until smooth.
Pour over the prepared crust.
Topping:
5 oz. Caramelized Onion Jam
Fresh Italian herbs
Spread the Caramelized Onion Jam over the top of the egg-cheese mixture and sprinkle with chopped herbs.
Bake for 25-30 minutes, until golden brown and amazingly fragrant.
Remove from oven and cool for at least an hour to allow the eggs and cheese to set before slicing and serving.
Sweet, savory, simply perfectly whimsical and bright.
