Pistachio Butter Chocolate Cookies: A Happy Accident in My Kitchen







Some recipes happen because you plan them. Others happen because you wander into the kitchen looking for a little joy based on conversations from earlier in the week. Somehow you end up creating something magical. Today’s cookies fall squarely into the second category.

I wasn’t trying to perfect a recipe or chase a trend. I just wanted to have fun. And what came out of the oven were these flat, crispy, unbelievably fragrant Pistachio Butter Chocolate Cookies that might be some of the best cookies I’ve ever made.

The Inspiration

I’ve never fully understood the Dubai chocolate craze — the gold foil, the neon‑green pistachio coloring, the over‑the‑top packaging. But I do understand one thing: real pistachios + real chocolate = absolute perfection.

So instead of going flashy, I went natural. No food coloring. No gimmicks. Just the deep, nutty flavor of true pistachio butter and the richness of chocolate.

What’s Inside These Cookies

The ingredient list is beautifully simple:

  • Pistachio butter

  • Halva: Halva is a dense, sweet confection popular in the idlle East, ade from a base of tahini, flour, sugar syrup,  pistacchios, .and other spices

  • Honey

  • Honey‑roasted pistachios

  • Butter

  • Flour

  • Baking powder

  • A few chopped Dubai‑style pistachio chocolate cups for flair

That’s it. No eggs. No extracts. No complicated steps. Just ingredients that love each other.

The halva melts into the dough and gives it this subtle sesame warmth. The pistachio butter brings richness. The honey caramelizes at the edges. And the chocolate cups add just enough decadence without overpowering the pistachio.

The Texture

These cookies bake up flat, crisp, and golden, with lacy edges and a chewy center. They’re the kind of cookie you break in half and immediately smell the pistachio and honey rising up in a warm cloud.

Pistachio Butter Chocolate Cookies

1 stick (8 Tbs.) butter, room temperature
1 ¼ cup pistachio butter
1 cup homemade Halva (pistachio sesame sweet treat)
1 cup honey
1 cup honey roasted pistachios, chopped
2 ¼ cups all-purpose flour
1 tsp. baking powder
1 tsp. vanilla extract
¼ tsp. kosher salt
1 cup Dubai Chocolate Pistachio Cups, chopped

Preheat the oven to 350°F.

Cream together the butter, pistachio butter, Halva, honey, vanilla, baking soda, and salt.

Add the all-purpose flour, ½ cup at a time.

Fold in the Dubai Chocolate and chopped pistachios.

Prepare three baking dishes with parchment paper.

Using your hands, form the dough balls into 1” mounds, and then flatten.

Place on parchment-lined baking sheets and bake for 15-20 minutes, until spreading and just beginning to brown around the edges. 

Remove from oven and cool for 20-30 minutes before transferring to storage containers or totally enjoying in every way!
