Queen Charlotte’s Hair: Bridgerton Strawberry Cream Cake

HOWEVER, some days things simply do not work out as hoped, dreamed, and intended.
Buttercream is finicky. On this particular day, first, I couldn’t get the color right (pale pink turned into coral pink). Then it was too cold. Then it was too warm. Ugh. The texture was all wrong.
Next, I intended to decorate with my beautiful buttercream roses. But, with my disease, my hands were in so much pain and simply would not work! I opted for a cream colored leaf-head for the icing. That looked terrible. So, I cried a few tears and went with some artificial flowers.
Now- and forever, it will appear in my mind as Queen Charlotte’s hair in Bridgerton - you choose the season! Utterly ridiculous.
If I had just skipped the buttercream, it would have been perfect.
On the other hand, feedback says it tasted truly delicious. One win out of several “runner-ups” this time.

Queen Charlotte’s Hair: Bridgerton Strawberry Cream Cake
Vanilla Cake:
3 cups all‑purpose flour
2 ½ tsp. baking powder
½ tsp. salt
1 cup butter, room temperature
2 cups granulated sugar
4 large eggs, room temperature
1 Tbs. vanilla extract
1 ¼ cups whole milk, room temperature
Preheat oven to 350°F. Grease and line four 6‑inch pans or two 8‑inch pans (to slice in half).
Whisk together flour, baking powder, and salt.
In a separate bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, mixing well, then stir in vanilla.
Alternate adding dry ingredients and milk, beginning and ending with dry.
Divide batter evenly and bake 22–28 minutes, or until a toothpick comes out clean.
Cool completely, then flash freeze to make sure the cake is ice cold before frosting.
Strawberry Mascarpone Filling:
1 cup mascarpone cheese
¼–⅓ cup powdered sugar (to taste)
1 cup finely chopped fresh strawberries (or frozen, thawed)
Whip mascarpone and powdered sugar until thick and cloud‑like.
Fold in chopped strawberries gently to keep the mixture airy.
Slather over each layer of cake, stacking. Then, cover the outside of the cake, all surfaces, with the filling, to lock in the cake’s moisture. Chill for several hours to set.
Vanilla Buttercream:
1 lb. butter, room temperature
4 cups powdered sugar
1 Tbs. vanilla extract
1–2 Tbs. heavy cream
1 small tube of pastel pink food coloring gel
pinch of kosher salt
Beat butter until pale and creamy.
Add powdered sugar gradually, then vanilla, food coloring, salt, and cream until smooth and spreadable.
BEWARE – this is so messy. The powdered sugar will go everywhere and the butter will be impossible to clean! 🤦🏼♀️

Generously frost the outside with vanilla buttercream. Feel free to add a textured décor layer of white icing.
