 Baking with Dubai Chocolate: A New Cookie Obsession

Today’s bake was pure magic. I folded spoonfuls of silky Dubai chocolate filling into soft, puffy cookies and tucked in a few chocolate‑covered pistachios for good measure. The result? Cookies so fragrant and decadent that my entire house smelled like a boutique dessert shop. I could hardly wait for them to cool before diving in to eat. Now I can’t wait to share them with all my peeps!

But before I get to the cookies, let’s talk about the star ingredient that made them unforgettable: Dubai chocolate.

Originating in the UAE, it’s a milk chocolate bar filled with pistachio‑tahini cream and crispy strands of kadayif, a shredded filo pastry used in Middle Eastern desserts. The filling ranges from smooth and creamy to thick and spoonable, always offering a contrast between lush pistachio richness and delicate crunch. 

The original bar, created by Fix Dessert Chocolatier, was inspired by knafeh: a beloved Arabic dessert made with kadayif, syrup, and soft cheese. That nostalgic flavor combination was reimagined into a chocolate bar that feels both modern and deeply rooted in tradition.

Dubai chocolate didn’t just go viral. It exploded.

A few reasons for its meteoric rise:

  • Flavor + texture perfection: Soft chocolate, creamy pistachio, and crispy pastry… this is a multisensory treat that stands out from typical candy bars. 

The craze has grown so large that major brands, from Trader Joe’s to Lindt, have released their own versions, and bakeries worldwide are incorporating Dubai‑style fillings into croissants, milkshakes, brownies, and more.

Using Dubai chocolate filling in cookies turned out to be a revelation. The pistachio‑tahini cream melted into pockets of nutty sweetness, while the chocolate‑covered pistachios added crunch and depth. Dubai Chocolate Pistachio Cookies

8 oz. butter or shortening, room temperature
3 large eggs
8 oz. Dubai Chocolate Filling
1 tsp. vanilla extract
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. sea salt
2 cups chocolate-covered pistachios

Preheat the oven to 350°F.

Line baking sheets with parchment paper.

Cream together the butter, eggs, and Dubai Chocolate Filling, as well as vanilla extract.

Once smooth and creamy, add the baking soda, baking powder, salt, and flour (1/2 cup at a time) and mix until a dough forms well. Not too wet, and not too dry.

Fold in the chocolate-covered pistachios.

Form into 1” sized balls and then flatten into discs.

Bake for 12-14 minutes, until puffy and just beginning to brown, releasing amazing aromatics.

Remove from the oven and cool for 10-12 minutes before transferring to a cookie display tray, or your mouth!
