Pancetta Mushroom Amarone Pasta 🍄🍷🍝

6 oz. pancetta, chopped
2 oz. dried wild mushrooms
kosher salt and freshly ground pepper
8 oz. tomato sauce
14 oz. canned chopped tomatoes
8 oz. sour cream
20 oz. Amarone wine
8 oz. fresh, homemade linguine
freshly ground black pepper

In a large pot, heat the pancetta over medium heat. Sauté until the fat begins to render.

Add the dried mushrooms, plus salt and pepper.

Cover, stirring occasionally, until the mushrooms plump and everything is coated in the pancetta fat.

Add the tomato sauce and chopped tomatoes, and bring to a boil.

Pour in the sour cream and Amarone. Stir, and bring to a boil once again.

Add the fresh pasta and boil for 3-5 minutes.

Reduce heat and simmer for another 3-5 minutes.

Remove from heat. Cover. Let stand for 20 minutes, until the fresh pasta has absorbed all the liquid it needs.

Serve, topped with plenty of freshly ground black pepper!
