Purple Sweet Potato Panko Balls with Roasted Carrots

Purple Sweet Potato Panko Balls with Roasted Carrots

2 purple sweet potatoes, baked (with skin) until soft
2 Tbs. butter
¼ cup all-purpose (or gluten-free) flour
2 large eggs
1 cup Panko breadcrumbs (gluten-free, if necessary)
sea salt and pepper

½ lb. peeled carrots
1 tsp. olive oil
sea salt and pepper

Preheat the oven to 425°F.

Mash together the baked potatoes with the butter, flour, and eggs.
Season with sea salt and pepper.

Form into 1-1/2” sized balls and roll in Panko breadcrumbs.

Line a baking sheet with parchment paper and place the balls, evenly spaced, on the sheet to bake for 10-12 minutes.

Turn over after 10-12 minutes to brown the opposite side of the balls.

Remove from the oven to cool.

Next, drizzle the carrots with oil and salt and pepper and roast for 15-20 minutes until soft and beginning to bubble.

Serve together topped with freshly ground pepper, extra salt, and freshly chopped herbs.
