A Savory Showstopper with a Twist: Spinach Puff Pastry Kielbasa Ring Bake

Puff pastry embraces the golden, flaky promise of comfort and creativity, as well as the hope for a decadent and promising filling. This Spinach Puff Pastry Kielbasa Ring Bake takes that magic and turns it into a centerpiece worthy of any table. It’s hearty, elegant, and just a little playful, with fillable pastry cups that invite you to admire and savor every bite.

It starts with a base of grated whole milk mozzarella, melted into a creamy layer that anchors the dish. Over that, a spiral of sliced kielbasa sausage adds smoky depth, while layers of gruyere cheese melt into rich ribbons of nutty flavor. The base also includes a mix of eggs and spinach, which brings brightness and balance, cutting through the richness with a touch of earthiness.

The puff pastry cups bake up golden and crisp, ready to cradle spoonfuls of that savory mixture. The result? A ring that’s both rustic and refined.
This is perfect for brunch, a cozy dinner, or a festive gathering.

Serve it warm, with a drizzle of mustard cream or a dollop of sour cream on the side, and watch it disappear slice by slice.

Spinach Puff Pastry Kielbasa Ring Bake

8 oz. whole milk mozzarella

1 cup frozen spinach leaves, thawed

3 large eggs

kosher salt and pepper

4 oz. mini puff pastry shells, thawed

1 lb. kielbasa sausage, thinly sliced

8 oz. Gruyere cheese, thinly sliced

Preheat the oven to 425°F.

Whisk together the spinach, eggs, salt and pepper.

Line the base of a pie pan with the shredded cheese.

Pour the spinach and egg mixture over the top of the cheese, concentrating on the spinach landing in the middle of the round.

Spiral the slices of kielbasa, Gruyère, and empty puff pastry cups (layered evenly) over the top of the cheese and egg-spinach mixture, beginning from the outside in.

Top with any extra puff pastry cups, crumbled, and additional salt and pepper.

Bake for 12-15 minutes, until the pastry is golden brown.

Remove from the oven and cool for several hours before slicing and serving.

Serve alongside marinated cabbage or delicious sauerkraut for an authentic experience and meal.
