Browned Butter Salted Caramel Cashew Vanilla Cookies 🍪




A cookie that tastes like a slow‑golden afternoon.


In my opinion, there are few kitchen moments as quietly magical as the making of brown butter. One minute, it’s just butter melting in a pan; the next, it transforms into something deeper, richer, and impossibly aromatic: a warm, nutty perfume that fills the whole kitchen with promise. 


Brown butter, or beurre noisette, is one of those classic French techniques that feels almost alchemical. By gently cooking butter until its water evaporates and the milk solids toast, you unlock an entirely new world of flavor: nutty, caramelized, and beautifully complex.


Scientifically, it’s a dance between the Maillard reaction and lactose caramelization. As the butter heats, its emulsion breaks, the water slips away as steam, and the remaining proteins and sugars begin to brown. In that moment, hundreds of new flavor compounds bloom into toasty furans, nutty pyrazines, and all the warm, golden notes that make brown butter taste like comfort itself.


And that’s where these cookies begin.


This recipe is one of my favorite creations to date. It’s incredibly aromatic, nutty‑sweet, and perfectly caramelized from the inside out. I take that freshly browned butter and whisk it with brown sugar to create a homemade caramel base, thick and glossy and fragrant enough to make you close your eyes for a moment. Then comes the salted caramel vanilla cashews, folded in like little jewels. 


They bring crunch, warmth, and a buttery sweetness that pairs beautifully with the deep, toasty notes of the dough.


The result? A cookie that’s soft at the center, crisp at the edges, and layered with flavor in every bite. They’re stunning — golden, textured, and studded with caramel‑kissed cashews. They’re the kind of treat that disappears quickly, the kind friends ask for again, the kind that makes the whole house smell like something wonderful is happening.


These cookies are everything I love about baking: simple ingredients transformed into something extraordinary. Nutty. Sweet. Caramelized. Perfect in every way.







Browned Butter Salted Caramel Cashew Vanilla Cookies 🍪

*Browned Butter:
1 cup salted butter

Use a stainless-steel or light-colored saucepan. The light interior helps you visually monitor the color of the butter so it doesn't accidentally burn. 

 

Place the butter over medium heat. For faster, even melting, cut it into equal-sized cubes.

The butter will melt, begin to bubble, and eventually foam up heavily as the water evaporates. Stir or swirl the pan frequently. 

 

Watch for the brown bits. As the foam subsides, you will see the color turn golden amber and notice toasty brown specks gathering at the bottom of the pan.

Remove from heat. Immediately remove the pan from the stove and pour the butter into a heat-proof bowl to stop the cooking process.


Cookies:
1 cup *Browned Butter
1 cup brown sugar, loosely packed
1 cup granulated sugar
3 large eggs
1 tsp. vanilla extract
½ cup kosher salt
1 tsp. baking soda
1 tsp. baking powder
4 cups all-purpose flour
2 cups Sea Salted Vanilla Cashews


Preheat the oven to 350°F.


While the Browned Butter is still hot, stir in the brown sugar, granulated sugar, eggs, and vanilla. Mix well.


Sprinkle in the salt, baking soda, and baking powder.


Again, mix well. (This can all be done by hand or with a stand mixer.)


Add the flour, 1 cup at a time, mixing to reach a cookie dough batter consistency.


Fold in the cashews.


Form into 1” sized balls and flatten into discs.


Place on parchment-lined baking sheets and bake for 15-18 minutes, until golden brown and puffy.


Remove from oven and cool for 10-15 minutes before delighting in the aromatic goodness of these divine drops of gold.
