Cinnamon Toast Crunch White Chocolate Cookies – And Kitchen Therapy Diaries




Some days arrive without sharp edges or bright colors. They’re not spectacular, but they’re not unspectacular either; just a soft, muted middle ground where nothing particularly good or bad happens. Today lived squarely in that space. I wasn’t unhappy, but I wasn’t energized. I wasn’t overwhelmed, but I wasn’t inspired. I was simply – languishing - drifting through the hours with a kind of emotional neutrality that felt both peaceful and unsettling.

When I find myself in that in‑between state, I turn to something that has never failed me: what I lovingly call anxiety baking and “procrastibaking.” These rituals lift my mood, soothe my mind, and, let’s be honest, conveniently delay the tasks I don’t feel ready to face. Cleaning, emails, reading, anything requiring sustained focus. All of it can wait when the kitchen calls.

Because time in the kitchen is my meditation. It’s where my mind quiets. It’s where my hands take over, and my thoughts soften. It’s where I can relax, concentrate, and forget the world for a while.



Today, that meditative escape led me to create a batch of marvelous, aromatic, completely delicious cookies for a friend’s son, along with a few other sweet distractions that filled the house with warmth and scent. As the day slipped by, I didn’t feel guilty for “wasting” it. If anything, I felt restored. Baking gave shape to a day that might otherwise have dissolved into nothingness.

Sometimes the most ordinary days become meaningful not because of what happens, but because of what we make happen. And today, I made cookies, and a little peace.

Cooking in the kitchen is my THERAPY.




Cinnamon Toast Crunch White Chocolate Cookies

8 Tbs. butter or shortening, room temperature
13.4 oz. Dulce de Leche
1 tsp. baking soda
1 tsp. baking powder
½ tsp. kosher salt
½ cup brown sugar
1 box. Cinnamon Toast Crunch, divided
2 cups all-purpose flour
12 oz. white chocolate chips

Preheat the oven to 350°F.

Line baking cookie sheets with parchment paper.

Cream together the butter, Dulce de Leche, baking soda, baking powder, and salt.

Once smooth, mix in the brown sugar and ½ the box of Cinnamon Toast Crunch cereal. Beat until the cereal has become fully broken down and the mixture is fairly smooth,

Add the flour ½ cup at a time, until fully incorporated.

Fold in the white chocolate chips and remaining cereal.

Form the dough into 1 – ½” mounds and then flatten into discs. 

Space evenly apart on the baking sheet and bake for 12-14 minutes, until golden brown.

Remove from oven and bask in the cinnamon-sweet aromatics, allowing to sit until cool enough to handle and devour with a big glass of ice-cold milk!
