1 cup pumpkin seed butter (smooth, unsweetened)
¼ cup salted butter, softened but not melted
1 cup granulated sugar
1 large egg
2 Tbs. fresh key lime zest (packed)
1/4 cup fresh key lime juice
1 tsp. vanilla extract
2 cups all-purpose flour
½ tsp. baking soda
½ tsp. baking powder
½ tsp. kosher salt
3/4 cup shredded coconut (unsweetened or sweetened)
Preheat the oven to 350°F. Line two baking sheets with parchment.
