It begins with a crust unlike any other: pureed rice crispy cereal folded into silky salted caramel, pressed into a base that’s delicate yet indulgent, crisp yet impossibly smooth. Lemon Pineapple Salted Caramel Cheesecake

Crust;
2 cups Rice Crispy cereal (processed finely)

1 cup salted caramel 

 

Filling:
8 oz. cream cheese, softened

12 oz. canned pineapple, with juice

1 fresh lemon, juiced

1 cup powdered sugar

2 Tbsp. all‑purpose flour

4 eggs

1 tsp. vanilla extract

½ tsp. kosher salt


White Chocolate Candy Ganache

8 oz. white chocolate candy

1/3 cup heavy whipping cream


2 Tbsp. salted caramel (for topping)


Line a cheesecake pan with parchment. 

Preheat the oven to 400°F.

Mix the pureed rice crispies with 1 cup salted caramel until fully combined, then press firmly into the bottom of the pan.

In a blender or food processor, puree the cream cheese, canned pineapple with juice, lemon juice, powdered sugar, flour, eggs, vanilla, and salt until completely smooth.

 

Pour the blended filling over the prepared crust, smoothing the top.

Bake at 400°F for 20 minutes. Without opening the oven, reduce the heat to 300°F and bake for an additional 30 minutes.

 

Remove from the oven and let the cheesecake cool completely. It should have no cracks and a softly set center.


Once set, using a double boiler, melt the white chocolate candy over a slow boil. Add in the whipping cream, whisking continuously until smooth and glossy.


Pour over the cooled cheesecake and chill until set.

 

Finish with caramel drizzle: about 2 Tbsp. warmed salted caramel over the cooled cheesecake, then chill again before slicing and serving.


This produces a glossy, golden finish that promises richness without overwhelming the tropical notes beneath.
