🌾 Rosemary Raisin Farro with Pine Nuts and Hot Honey
2 Tbs. extra virgin olive oil
2 cups rustic farro
4 cups water
kosher salt and freshly ground pepper
2 Tbs. hot honey
1 cup raisins
1 cup pine nuts
2 Tbs. fresh rosemary, chopped
Bring a large pot to high heat.
Add the olive oil and bring to a shimmer.
Add the farro and sauté until toasty and golden brown, stirring constantly.
Add 4 cups of water and bring to a boil.
Reduce to a simmer and cook until the grain softens to an al dente texture.
Stir in the hot honey, raisins, and pine nuts.
Once all the liquid has absorbed, stir in the rosemary.
Remove from heat.
Serve, topped with additional rosemary (if desired) and freshly ground pepper.
