Sweet Heat Mexican Chocolate Cookies

Made with rich chocolate peanut butter, a bit of hot chili honey, melty chocolate chips, and a crumble of deeply spiced Mexican Chocolate (already made) Cookies, they strike that perfect balance of sweet first, heat later. Sweet Heat Mexican Chocolate Cookies

1 stick butter (8 Tbs.), softened
14 oz. Dark Chocolate Peanut Butter
½ cup Hot Chili Honey
2 large eggs
1 cup granulated sugar
2 ½ cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. kosher salt
1 cup dark chocolate chips
2 cups Mexican Chocolate Cookies (minis), crumbled

Preheat the oven to 350°F.

Cream together butter, chocolate peanut butter, hot honey, eggs, and sugar.

Add the flour, baking powder, soda, and salt.

Mix until well combined.

Fold in the chocolate chips and cookie crumbles.

Form into 1” diameter balls and flatten into discs.

Place onto parchment-lined cookie sheets and bake for 12-14 minutes.

Remove from the oven and cool before transferring to a serving dish and devouring!
