Easy Lemon Curd Graham Scones

2 cups graham cracker crumbs
1 1/4 cup Lemon Curd
2 large eggs
4 cups instant biscuit mix
1 1/4 cups water

Preheat the oven to 450 degrees.

Line several baking sheets with parchment paper.

Mix together the graham cracker crumbs, lemon curd, and eggs until well combined.
Mix in the instant biscuit mix and then stir in the water until very well combined.

Spoon 2" sized blobs of biscuit/scone dough on the prepared baking sheets, leaving plenty of room in between each blob.

Bake for about 12 minutes, until the pastries are just beginning to brown.

Remove from the oven and cool enough to handle before devouring in any way you choose.
