Carrot Hazelnut Black Pepper Lemon Pesto: A Cozy, Zesty Vegetarian Dream

Both rustic and gourmet, this recipe elevates the idea of comfort food. It’s earthy and bright, and both simple and unforgettable. This Carrot Hazelnut Black Pepper Lemon Pesto is simply magic.

It’s a pesto that doesn’t try to imitate the classic; it proudly does its own thing. Sweet cooked carrots, nutty ground hazelnuts, bold black pepper, and fragrant lemon zest come together in a thick, velvety sauce that clings beautifully to pasta. It’s warm, aromatic, and deeply satisfying. This is the kind of dish that makes you pause after the first bite.

🥕 What Makes This Pesto So Special

  • Ground hazelnuts bring natural sweetness and a toasty, buttery depth
  • Cooked carrots add body, color, and a mellow, earthy flavor
  • Lemon zest brightens everything without overpowering
  • Freshly ground black pepper gives the pesto its signature kick
  • Parmesan adds savory balance
  • Olive oil ties it all together into a silky, spoonable sauce

The texture is thick and rustic — more hearty than traditional basil pesto — and that’s exactly what makes it so satisfying.

🍝 The Perfect Partner: Rigatoni

This pesto absolutely shines with Italian rigatoni. The ridges and hollow centers catch every bit of the carrot‑hazelnut goodness, turning each bite into a perfect balance of nutty, peppery, citrusy flavor.

It’s a vegetarian dish that feels complete — no substitutions, no missing pieces, just a bowl of pure comfort with a gourmet twist.

🌿 A Flavor Profile That Surprises (In the Best Way)

What makes this pesto unforgettable is the interplay of flavors:

  • The sweetness of the carrots
  • The nutty richness of hazelnuts
  • The zing of lemon zest
  • The heat of black pepper
  • The savory whisper of Parmesan

It’s bold yet balanced, earthy yet bright. It’s a sauce that tastes like sunshine meeting a cozy summer or autumn kitchen.

🥕 Carrot Hazelnut Black Pepper Lemon Pesto

2 cups hazelnuts
2 cups cooked carrots, sliced
1 Tbs. fresh lemon zest
1 Tbs. whole black peppercorns
1/2 tsp. kosher salt
1 cup parmesan cheese, grated
1/4 cup olive oil
4 cups cooked Italian rigatoni pasta + 1/2 cup cooking water

In the bowl of a large food processor, pulse the hazelnuts until somewhat finely ground.

Add the carrots, lemon zest, peppercorns, and salt. Pulse until chunky,

Add the cheese and begin to process, drizzling in the olive oil.

The pesto is "done," once fully combined and thick.

Bring a large pot of water to a rapid boil and salt the water. Cook the pasta until al dente. Drain, reserving 1/2 cup of the cooking water in the pot with the pasta.

Return to the cooking pot with the reserved starchy water and add the prepared pesto. Stir well.

Cover and let sit for 10-15 minutes.

Stir until well combined.

Serve, topped with Italian parsley for presentation and color.

Enjoy with a lovely glass of white wine.
